Snowy Mince Pie Bliss Balls
4 tbsp Smooth Vanilla Clean Lean Protein
½ cup mixed dried dates, sultanas and apples
¼ cup almonds
1 tbsp fresh lemon rind
1 tbsp fresh lemon juice
1-2 tbsp maple syrup, honey, agave syrup or brown rice syrup
2 heaped tbsp almond butter
1 tbsp chia seeds
½ tsp cinnamon, nutmeg and mixed spice
¼-½ cup warm water
¼ cup desiccated coconut, for rolling
1. Blend all ingredients except the desiccated coconut in a blender until mixture is smooth.
2. Roll into balls of your desired size and roll in the desiccated coconut.
3. Set in the fridge for at least 30 minutes, remove from the fridge and enjoy! These can be stored in an air-tight container in your fridge for up to seven days.
