Cherry Coconut Date Clusters

These clusters balance carbs, fats, and protein for a dessert that works with your body, not against it.

Serves: 18-20 clusters / Prep time: 10 mins / Freeze: 40+ mins

Ingredients:

  • 20 large Medjool dates, pips removed
Tart cherry filling:
  • 1/3 cup dried tart cherries, pre-soaked
  • 1/4 cup desiccated coconut
  • 4 scoops Nuzest Clean Lean Protein, Smooth Vanilla
  • 1/2 cup tart cherry extract (liquid)
  • 2/3 cup coconut butter, melted
Chocolate shell:
  • 1 cup sugar-free dark chocolate, melted
  • 2 tbsp chopped hazelnuts

Method:

  1. Blend all filling ingredients in a food processor until a sticky dough forms. 
  2. Fill each date with around 1.5 tsp filling. Place on a lined tray and freeze for 40 minutes. 
  3. Mix melted chocolate with hazelnuts, coat each date, then freeze for a further 15 minutes. 
  4. Store in an airtight container in the fridge for up to 2 weeks or freezer for up to 4 weeks. 
Notes: Coconut butter texture varies by brand; melt gently in 30-second intervals, stirring between, until pourable. If the filling is too crumbly, add extra coconut butter or a small amount of coconut oil until sticky.
