Lemon Coconut Protein Balls

These lemon coconut protein balls tick all the boxes of a smart snack: they keep you full, and satisfy sweet cravings.

Serves: 12 balls / Prep time: 10 mins / Bake: 20 mins

Ingredients:

  • ½ cup creamy cashew butter
  • ⅓ cup desiccated coconut
  • ½ cup melted coconut butter
  • 5 large Medjool dates
  • ½ cup Nuzest Clean Lean Protein Smooth Vanilla
  • 30 ml lemon juice
  • 1 tbsp lemon zest

Method:

  1. Add all ingredients to a food processor. 
  2. Blend until the mixture comes together into a dough-like consistency. 
  3. Roll into 12 evenly sized balls. 
  4. Freeze for 20 minutes, then enjoy straight away. 

Optional: Drizzle with melted coconut butter and sprinkle with extra lemon zest before serving.

Notes:

  • Store in an airtight container in the fridge or freezer.
  • If frozen, allow to thaw slightly before eating.
